Are potatoes banned forever?
No, but be reasonable, and think of it as eating a piece of cake, have a small serving and eat it rarely.
People don't eat potatoes because they think they taste good. We like them because they are a vehicle for delivering fat. If you eat potatoes, be sure to eat them with lots of organic butter, bacon, sour cream and/or chili on top to slow the absorption of the sugar from the potato into your bloodstream.
Sweet potatoes, on the other hand, are a great addition to your diet.
Who buys the most potatoes?
McDonalds.
According to Eric Schlosser's Fast Food Nation, McDonalds buys 3.42 billion pounds of potatoes a year, about 7.5% of the US potato crop. Americans are eating about 30 pounds of French fries per year, 90% of which are sold through fast food chains.

Are potatoes genetically modified?
In 1995, Monsanto gave us the NewLeaf™ potato. U.S. farmers planted about 50,000 acres of NewLeaf potatoes in 1999 for a total U.S. potato production of about a million acres that year.
The potato has DNA from bacteria spliced into its genetic coding to protect against Colorado potato beetles. When the beetles try to eat the leaves, they die.
Due to the public outcry against genetically engineered foods, companies like McDonalds quietly started backing down from the GMO potato.
Sales and marketing activities were stopped and Monsanto is now focusing on its top four genetically modified crops, corn, soy, wheat and cotton.
One teensy problem, once you introduce a genetically modified organism, you can't really call it back

Wait, isn't BASF the company that brought us cassette tapes? Coming soon, unlabeled so you won't know, the Amflora potato and the Fortuna potato. The Amflora is geared for commercial use and animal feed but the Fortuna, due to arrive in two years, will be slipped into the food supply.
Remember the potato, loaded with sugar-spiking starch and not much else? After all that wonderful news about potatoes you might be surprised to learn that Idaho potatoes are certified by the American Heart Association and "meets criteria for heart healthy food."

Is 100% Fruit Juice a Healthy Drink?

In a word, no.

This is heresy, you think!

Maybe, but it is still true.

Researchers found that drinking fruit juice or soda increases your risk of diabetes by as much as 30%.

The researchers said,

“Drinking sweetened soft drinks or fruit drinks was associated with an increased risk of developing diabetes,”

The process of making fruit juice reduces the nutrients and the fiber content. (No you can't drink your juice and “balance” it with a shot of Metamucil.)

Eating a whole apple gives you nutrients plus 4 grams of fiber to slow the digestion of the carbs. A glass of apple juice requires about 4 apples, so you get four times as many carbs but are missing out on 16 grams of fiber.

So what? The sugar is rapidly absorbed into the blood stream... Carbs turn into sugar in your body.

An apple would be fine, but 4 apples (or a glass of juice made from 4 apples) would really shoot your blood sugar up. There is no fiber in juice to slow the absorption of the sugar and the nutrients have been damaged in the process of making the juice.

Alissa Hamilton, author of Squeezed: What You Don’t Know About Orange Juice, states:

“In the process of pasteurizing, juice is heated and stripped of oxygen, a process called deaeration, so it doesn’t oxidize. Then it’s put in huge storage tanks where it can be kept for upwards of a year. It gets stripped of flavor-providing chemicals, which are volatile. When it’s ready for packaging, companies such as Tropicana hire flavor companies such as Firmenich to engineer flavor packs to make it taste fresh. People think not-from-concentrate is a fresher product, but it also sits in storage for quite a long time…” website


Fruit juice is really a glass of sugar water. (heresy)

Yes, it is better than drinking coke, but that’s not the point!

The point is: Drink water and eat whole fruit.

Store-bought juice has been pasteurized and cooked at such high temperatures that all enzymes have been destroyed. Without the fiber, the sugars in the juice are quickly absorbed, spiking your blood sugar level.

Our glasses of juice have grown from tiny 2 ounce glasses of fresh-squeezed to a 12oz sugar rush (10 tsp. of sugar in the body!! )

We're not just drinking a glass of juice at breakfast. The bagels, cereal, toast, pancakes etc. are all simple carbs that rapidly convert to sugar.

How much sugar are you really eating at breakfast? Give little Suzy a bowl of cereal, a piece of toast and a glass of juice for breakfast and you will send her off to school jacked up on about 30 tsp of sugar.

Hello? This is just breakfast. What's Suzy eating the rest of the day?

Anyone want to guess why 67% of Americans are obese and overweight?

Mainly, it is the simple carbs. Eating whole fruit provides enzymes and nutrients plus the needed fiber to slow the absorption of sugar.

What about fermented grape juice?

Alcohol puts the brakes on weight loss.

Here’s what happens when we drink alcohol:

  1. Less than 5% is turned to fat (doesn’t sound too bad, but read on)
  2. Most of the alcohol is turned into acetate.
  3. Acetate is what slows the fat loss we are working so hard to achieve. The body will choose to use acetate over fat as a fuel source.

Your body can utilize many sources for energy.

If you eat too many carbs, your body will use them as a source of energy instead of fat. The liver is burdened with the job of metabolizing most of the alcohol. The liver would prefer to use fatty acids for fuel but it is forced to metabolize the alcohol first, so the fatty acids accumulate (ever hear of fatty liver disease?).

The acetate replaces fat as a source of fuel.

Alcohol also reduces testosterone levels.

Not a good thing, unless you want a flabby belly and weaker muscles.

Men and women both need testosterone but men have about ten times more. By age 70 a man has about half the testosterone as when he was 30.

We all need testosterone for increasing muscle strength and bone mass.

Testosterone robbers:

  • caffeine
  • sugar
  • alcohol
  • cigarettes

We all like to focus on the heart healthy studies about red wine, right? I guess we need to realize that the nightly alcohol is doing a few bad things too, like giving us fat bellies, weak muscles and osteoporosis. Yikes.

How do we stop this crazy sugar train from running away with our testosterone?

  1. Eat a diet of whole foods
  2. Eat protein from plant and animal sources.
  3. Eat healthy fat (olive oil, nuts, seeds, olives, avocados, coconut oil, butter)
  4. Increase fiber in the diet
  5. Eat cabbage, radish, turnips, beef, broccoli, Brussesl sprouts, oysters, garlic, eggs and cauliflower
  6. Exercise daily
  7. Take up strength training
  8. Take a good multi and a good zinc supplement (15-50 mg/day).

Zinc is needed for the metabolism of testosterone. Zinc inhibits fat cells from turning testosterone to estrogen and it is found in seafood, meat, eggs and black-eyes peas.

You can also work with a Naturopathic Physician for natural, bioidentical hormone replacement.

Remember, eating and drinking foods and beverages that rapidly convert to sugar will cause your blood sugar levels to increase which leads to a jump in insulin which causes increased body fat and decreased testosterone. Decreased testosterone leads to weak muscles and weak bones.

All this from a glass of wine?

We drink one, but we always want another! It’s a viscious cycle. Ever read the book, If You Give a Mouse a Cookie ?

Can Nutrition Education Save us From Diabetes?

It is bold for me to say that when it comes to nutrition education I target a group that is 34 percent of the country, certainly bigger than I can get my arms around, but when the topic is reversing diabetes and the potential audience encompasses 104,800,000 people who does not deserve to know this information (Centers for Disease Control and Prevention [CDC], 2011a)? In reality, I can reach a fraction of these people, so my realistic target audience initially includes a handful of people in my community with diabetes or pre-diabetes who want to improve their health and explore the possibility of improving or even reversing their condition.

With the advancement of knowledge and science around the subject of diabetes we have not seen a reduction in the number of cases or of deaths due to diabetes. In fact, Time magazine featured an article, Medicine: Diet or die (1942) stating that in the 20 years following the discovery of insulin in 1922 the death rate from diabetes continued to rise and was 68 percent higher in 1942 than it was in 1922. Since that time diabetes has risen from the tenth cause of death in 1942 to the seventh cause of death in 2007, responsible for 23.5 percent of all deaths (Xu, Kochanek, & Tejada-Vera, 2009) compared to 0.027 percent of all deaths in 1940 (Medicine: Diet or die, 1942).

The need for nutrition education can not be refuted because science has failed to stem the tide of diabetes and the devastating toll it is taking on the health of our nation. The current standards of treatment are failing and the need to go against conventional medical dogma coupled with the growing cases of diabetes might deter most well intentioned nutrition educators from taking on such a lofty mission.

I am reminded of a story that was told by Jack Canfield and Mark V. Hansen in their book, "Chicken Soup for the Soul: 101 Stories to Open the Heart & Rekindle the Spirit."

One at a Time

A friend of ours was walking down a deserted Mexican beach at sunset. As he walked along, he began to see another man in the distance. As he grew nearer, he noticed that the local native kept leaning down, picking something up and throwing it out into the water. Time and again he kept hurling things out into the ocean.

As our friend approached even closer, he noticed that the man was picking up starfish that had been washed up on the beach and, one at a time, he was throwing them back into the water.

Our friend was puzzled. He approached the man and said, “Good evening, friend. I was wondering what you are doing.”

“I’m throwing these starfish back into the ocean. You see, it’s low tide right now and all of these starfish have been washed up onto the shore. If I don’t throw them back into the sea, they’ll die up here from lack of oxygen.”

“I understand,” my friend replied, “but there must be thousands of starfish on this beach. You can’t possibly get to all of them. There are simply too many. And don’t you realize this is probably happening on hundreds of beaches all up and down this coast. Can’t you see that you can’t possibly make a difference?”

The Local native smiled, bent down and picked up yet another starfish, and as he threw it back into the sea, he replied, “Made a difference to that one!" (Canfield & Hansen, 1993)

Sometimes, as nutrition educators, we have to remind ourselves, when we help one person we are making a life changing difference to that one person. If my work enables even just one individual to learn how to eat and live in such a way that they are able to reverse diabetes, get off medication and potentially extend the quality and length of their life then I consider that to be a tremendous success and a passion worth pursuing.

A campaign dedicated to ending the American Dietetic Association's collusion with the junk food and big pharmaceutical industries.

America's health is suffering and we need independent professionals who work to improve our health, NOT big-industry bottom lines.

Remember the Smart Choices Program, a front-of-pack nutrition labeling program?

What kinds of foods were getting the "Science-based symbol"

· The program was handing its green seal to processed foods that are high in sugar and artificial ingredients, junk oils, MSG, and preservatives

Companies paid up to $100,000 a year to be the program, with the fee based on total sales of its products that bear the seal. It was a program paid for by industry and industry dictated how it would run.

· Kellogg Co.

· Kraft Foods Inc. and

· General Mills Inc.,

· Con Agra

· Unilever

· PepsiCo

· Tyson

Junk foods like Froot Loops cereal, Fudgesicles and Cracker Jack snack food.

Why did it shut down within months?

On the website press release: Washington, D.C., Oct. 23, 2009 - The Smart Choices Program announced today that it will voluntarily postpone active operations and not encourage wider use of the logo at this time by either new or currently enrolled companies.

Walter C. Willett, chairman of the nutrition department of the Harvard School of Public Health said the criteria used by the Smart Choices Program were seriously flawed, “It’s a blatant failure of this system and it makes it, not credible.”

Eileen T. Kennedy, president of the Smart Choices board and the dean of the Friedman School of Nutrition Science and Policy at Tufts University, said

· the program’s criteria were based on government dietary guidelines and widely accepted nutritional standards.

· This is another way of saying "the dietary guidelines that the ADA, AHA, Am Diabetes Assoc etc adhere to are seriously flawed and the dietary guidelines are a blatant failure.

Can I just add, this is no different than the American Heart Association's, Heart Healthy Food System that certifies junk food like pancake mix, egg beaters, boxed cereals, and frozen dinners.

  • The only difference is that the AHA lists food made by the companies that give them money, which is not the same list of companies that give money to the ADA.

FACT: The ADA allowed the junk food company–sponsored “Smart Choices” food labeling program (now considered a failure and an embarrassment) to be introduced at their Food & Nutrition Conference & Expo.

FACT: The ADA allows pharmaceutical companies to market their controversial products at ADA events. At the 2007 ADA Food & Nutrition Conference & Expo, GlaxoSmithKline was allowed to promote their first over-the-counter diet pill, Alli, even though the drug’s weight loss effectiveness is minimal and side effects such as hard-to-control bowel movements and anal discharge are common. The FDA has since issued warnings to Alli, noting the possibly of severe liver damage, and consumer groups are asking the FDA to remove Alli from the market.

It's winter but you have a sweaty head. You feel a little depressed and you are craving carbs... big time.

Could it be vitamin D?

Vitamin D is incredibly important and you probably ARE deficient because only about 25% of people in the U.S. have adequate levels of Vitamin D.

Unfortunately, if you listen to the powers that be you will not get vital information that can prevent Vitamin D deficiency. The Institute of Medicine (IoM) said, "the committee emphasizes that, with a few exceptions, all North Americans are receiving enough calcium and vitamin D."

Quick to back their buddies, the American Dietetic Association went on record with full support of this ridiculous statement.

The IoM happens to be well funded by the pharmaceutical and vaccine industries.

So let's move on to some truth.

What symptoms might be present in people with low Vitamin D?

An eight year study involving 25,000 people showed 80% reduction in colon cancer in those people with adequate Vitamin D levels (Lancet, 1989).

A University of Nebraska study of women showed that adequate levels of Vitamin D have the potential to lower all cancers by 77%.

When sunlight hits exposed skin, Vitamin D can be made.

BUT...most of us (lifeguards excluded) are never outside enough during the summer months without sunscreen and big hats.

Seven of every 10 U.S. children now have low levels of vitamin D. Those most likely to be deficient include children who are obese or who spend more than four hours daily in front of the TV, computer or video games (Kumar 2009).

We have been brainwashed (again) by "experts" who tells us that the sun is bad and causes cancer. Yes, if you have a chronic habit of excessive exposure to sunlight, laying out until you are crispy, then this can increase the risk of skin cancer.

That's not what I'm talking about.

We NEED sensible sun exposure to make Vitamin D.

Just 15 minutes a day in the summer, about three times a week with at least our arms, face and legs exposed. Dark skinned people need even more. After you get your small dose of sun, then use protection so that you don't burn.

The sunscreen industry and the American Academy of Dermatology (ADA) has been brainwashing us for 30 years that we must never be out in the sun without sunscreen and protective clothing.

The ADA tells us to

  1. Generously apply a broad-spectrum, water-resistant sunscreen with a Sun Protection Factor (SPF) of 30 or more to all exposed skin. (Um, how are we going to make our vitamin D? Did Adam and Eve wear sunscreen?)
  2. Wear protective clothing, such as a long-sleeved shirt, pants, a wide-brimmed hat, and sunglasses, where possible.
  3. Seek shade

It is believed that the ADA receives millions of dollars to help promote chemical sunscreen as a daily-use product. (There's that money thing again.)

Interesting that SPF 8 sunscreen blocks your ability to make vitamin D by 95%.

The mere mention of going outside without sunscreen for 15 minutes has caused at least one dermatologist to be fired. Michael Holick, MD is the world’s leading authority on vitamin D. Yet Dr. Holick was fired from Boston University Medical Center’s dermatology department for advocating what he calls "sensible sun exposure."

Dr. Holick said, "In Boston, 50% of adolescent boys and girls are vitamin D deficient. 70% of moms and 80% their babies are vitamin D deficient at birth. These infants have no vitamin D stores, and the moms have none to give them. Rickets is only the tip of the vitamin D deficiency iceberg."

Vitamin D Deficiency Rickets usually occurs within the first two years of life but can occur later on too.

Mamas, if you are deficient, your breast milk is deficient in Vitamin D.

Vitamin D deficiency is commonly misdiagnosed as physical child abuse because children are presenting in the ER with unexplained broken bones. The cause is rickets, not physical abuse by the parents. Read this horrific story.


What to do?

1. Have your vitamin D level tested.

Be sure that your doctor orders the test, 25-OH D. Hopefully your insurance will cover the test, but I have heard that some will not, and doctors are charging sometimes as much as $300 for a test.

2. Know what is a normal vitamin D level.

Most doctors and labs set the normal range for vitamin D too low. The optimal range is 50-80 ng.

If your Vitamin D level is below 40 ng you are very deficient and must get to work raising your level by eating vitamin D foods, getting out in the sun and taking a supplement.

3. Supplement wisely.

Most people do well taking about 2,000 - 5,000 IU per day of vitamin D3 (not D2 which is much less effective).

If you are deficient you may need to supplement up to 10,000 IU per day for a few months. Don't worry, it is almost impossible to OD on vitamin D. In fact, if you go outside in the summer for 15 minutes you will make about 10,000 IU naturally.

  • For babies less than 1 year, add 400 - 1,000 IU (drops are available)
  • kids over age 1 can have 1,000 IU for every 25 pounds in body weight.

Since Vitamin D is a fat-soluble vitamin, choose supplements that are oil-based, preferably olive oil but never soybean oil.

The Environmental Working Group tells us that sunscreen itself has many toxic ingredients. Some of which disrupt hormones. Look for less toxic sun products on their website.

A word about prescription vitamin D called Drisdol.

It is the synthetic form, D2. Prescription vitamin D is 87% less effective compared to vitamin D3 that you can buy on your own.

It is also full of junk ingredients like Yellow No. 5 (tartrazine) which may cause allergic-type reactions (including bronchial asthma), Blue #1, Gelatin, Glycerin, Parabens, Soybean Oil and propylene glycol (anti-freeze).

4. Eat vitamin D rich foods.

  • Fatty fish like salmon (530 IU/3 oz)
  • Sardines (230 IU/3 oz)
  • Mackerel (154 IU/3 oz)
  • Cod liver oil (400 IU/tsp)
  • Duck egg (720 IU/egg)
  • Chicken egg (120 IU/egg).

Pasteurized milk has synthetic vitamin D added and the amount in one 8 oz glass of milk is only 100 IU.

You would need to drink 40 glasses of milk to reach 4,000 IU, probably not a good idea.
