Autism Reversed with Virgin Coconut Oil

Autism is a developmental disability that affects how the brain functions, especially in those areas of the brain that control social ability and communication skills. Boys are most likely to develop autism, and most children are diagnosed before the age of three.

My name is Rosemarie Rosales. I live in Lapu-Lapu City, Cebu, Philippines. My son Homer Ponce Rosales was diagnosed March 13, 2002 with autism spectrum disorder (ASD). He was one week away from his fourth birthday. My primary concern at that time was his speech delay.

Imagine, he was almost fours years old but I had yet to hear him call me Mama (the sweetest word a mother hears from her child). His hyperactivity bothered me greatly. He was so hyperactive that as soon as he stepped out of the house he wouldn’t come back because he didn’t know how to get home. He goes into our neighbors’ homes without their permission and destroys their belongings—computers, vases, TV, stereo, etc. He would enter people’s homes unnoticed. The owners would open a door and be shocked to find him all alone in their homes.

He had no fear of danger. He never indicated if or when he was hungry. He never played with other kids and usually harmed them by throwing stones at them or striking them with hard objects. He was so destructive in church, restaurants, and stores that we rarely took him to public places. Oh my, what kind of a child I have!

Despite behavioral therapy, Homer showed little progress. Then God guided me to PRIME Center Foundation. Mr. Roni Romeo Ocubillo, the founder of this special school introduced me to a gluten-free and casein-free diet. His approach was supported by studies that demonstrated that

  • certain foods seem to affect the developing brains of some children with autism.
  • This is not because of allergens but because many of these children are unable to properly break down certain proteins.

Researchers in England, Norway, and the USA have found peptides (breakdown products of proteins) with opiate activity in the urine of a large percentage of autistic children. Opiates have drug-like effects that alter brain function.

The two main offenders seem to be gluten (a protein found in wheat, oats, rye, and barley) and casein (milk protein). Some researchers believe that in certain children, these foods have a drug-like effect on their brains causing autistic behavior.

He told me that autism seems to be an immune system dysfunction. Leaky gut syndrome also appears to be involved. The leaky gut permits undigested proteins from gluten and casein to pass through the intestinal wall and into the bloodstream. The bloodstream then transports them into the brain where they disrupt normal brain function.

Candida and other yeasts live in our bodies in small amounts. It is believed that in individuals with improperly functioning immune systems, candida could flourish, damaging the intestinal wall leading to leaky gut syndrome.

Some of the symptoms of candida overgrowth in children include sugar cravings, headaches, hyperactivity, and behavior and learning problems. So candida also may, in part, be responsible for autistic behavior. Many parents of children with ADD or ADHD, as well as those with autism, report that treatment for candida does in fact improve their children’s behavior and concentration. Nystatin, an antifungal drug used to fight candida, is recommended to all the autistic children enrolled in the PRIME program.

At the age of four, Homer began his special school and his new diet. We eliminated all foods containing gluten and casein. Many of my son’s favorite foods such as spaghetti, oatmeal, and milk were now off limits. Nystatin was given to him to control candida and aid in building a healthy digestive tract. The program seemed be working. His hyperactivity lessened, he could focus more, and could talk a little with some sense. When I ask, “What are you doing Homer?” He could answer “Safeguard, wash.”

After following the gluten-free and casein-free diet for almost 10 months, I felt my son was on his way to lasting improvement. His behavior improved, he became more manageable, he began to socialize with other kids, could read and write a little, and talk a little. I was really very happy and satisfied with his progress.

To our dismay, we got another blow when Homer came down with pneumonia. He was confined at the hospital and advised to rest. He was absent from his therapy for a full month. During his stay at the hospital the nurses and doctors had a hard time putting in his IV. He was very strong. It literally took hours to attach the IV. When he felt the pain, instead of calling “Mama,” he shouted: “Help Barney! Mickey Mouse help! Superman, Batman!” My goodness…what a child I have! He wouldn’t take his medicines orally because he didn’t like the taste. It was a struggle for me at the hospital taking care of him. He got his medicines, mostly antibiotics, through his IV. He didn’t like to eat. He was asking for his spaghetti, wanted to drink milk and other foods prohibited on his therapy diet. He wasn’t eating properly. I was worried about his ability to fight off the infection. I called PRIME and asked permission to allow Homer to eat the foods he liked for the sake of his health.

When he went back to his school, all of the staff, including Mr. Ocubillo the foundation’s director, were disappointed and frustrated with his behavior. He was back to zero. His autism was so prevalent again! He was very hyperactive again. We had to start all over. Mr. Ocubillo told me that it was due to the antibiotics while he was hospitalized. The antibiotics not only killed the bacteria that caused his pneumonia but also the good intestinal bacteria, which help keep candida under control. I was so depressed with this regression, I don’t remember how many times I cried. But still, I didn’t lose hope. I prayed hard to God for His guidance. I have a strong faith that God has His purpose for giving me this special child.

My prayers were answered and the answer came from an unlikely source—virgin coconut oil. I had heard how coconut oil could be used to strengthen the immune system, prevent illness, and improve health.

I began to take it daily by the spoonful as a dietary supplement. I observed that my overall health improved, including my asthma. I thought it might help Homer by building up his immune system. He didn’t want to take the oil and it took awhile to get him to take his first spoonful. I continued to give it to him every day and sometimes three times a day. After two months, I noticed a dramatic improvement in his behavior and especially in his speech. Up until then, he had only been able to understand and speak a little in English. Now, not only was his English improving, but for the first time he was beginning to speak in Cebuano—our native dialect.

Autistic children often never learn to speak and when they do, they have limited communication skills. Homer was learning to speak two languages!

Homer is now 7 years old. Autistic characteristics such as echolalia (a seemingly unconscious habit of repeating words or phrases spoken by others) and ritualistic behavior are gone. He can read very well and write clearly. He can tell stories and express his feelings and ideas and has plenty of friends. He asks permission when going to our neighbors’ houses and knows his way back home.

I shared my knowledge of coconut oil with Mr. Ocubillo at PRIME. At first, he was skeptical. So I gave him some articles to read. He was also given a copy of Dr. Bruce Fife’s book The Coconut Oil Miracle. In the book Dr. Fife describes, among other things, the antifungal properties of coconut oil. That’s when I realized that coconut oil killed the candida in my son’s intestines. Originally, my only purpose in giving Homer the oil was to improve his immune system. I never realized that his autism would be gone with the help of coconut oil. What an amazing miracle! Mr. Ocubillo researched coconut oil further and now all the children at the PRIME Center Foundation are taking virgin coconut oil daily. It has replaced the antifungal drug Nystatin formerly used.

This coming June, Homer will be attending regular classes at a private school. During the evaluation process the principal was impressed because Homer can read very well. He got a score of 61 out of 65 on the written exam. Thanks to coconut oil I can say “goodbye” to PRIME Center forever and say “welcome to the world of regular students!”

Update one and a half years later:

Homer is very talkative with a good vocabulary. He can speak what is on his mind. He has plenty of friends in school, neighborhood, and in our church. Homer is doing great in his regular school. He’s one of the top five students in the class. He has even joined the church choir.

His behavior has changed remarkably. We now enjoy going to malls, parks, and restaurants. I no longer have to constantly keep a hold of him. When my hands are full when we go to the market, either he just trails me from behind or holds on to my clothes. He is now a typical child, very different from what he was three years ago. Sometimes, he surprises me. He hugs and kisses me for no apparent reason. The initiative comes from him. Affection is something I missed when he was younger.

I read the [above] story about Homer to my husband Jun. Homer was in the room playing with a game. When I read the words “Homer is autistic,” he spontaneously said, “I’m not autistic anymore!” He’s right, he not. Some parents especially those who first encounter Homer cannot believe that he was once a “special” child.

Homer is not on a special diet any more. He eats anything he wants, including his fair share of sweets and junk foods. However, he continues to take his coconut oil every day.

Over the years a number of parents have reported that coconut oil has helped their special needs children overcome developmental disorders such as autism, ADHD, and epilepsy.

Rosemarie Rosales attributed the improvement she saw in Homer to coconut oil’s ability to rebalance the microbial environment in Homer’s digestive tract and heal damaged tissue.

Studies have shown that autistic children have a high population of bad microflora such as candida, E. coli, and Clostridium tetani (tetanus), and lower populations of good microflora than normal children. These bad microorganisms cause chronic inflammation and damage the intestinal wall, interfering with digestion and nutrient absorption. Coconut oil helps reestablish a healthy gastrointestinal environment by killing the bad bacteria, encouraging the growth of good bacteria, and stimulating the healing of the damaged intestinal lining.

Coconut oil, however, does far more than just heal the digestive tract, it can help rebalance the brain as well. The key is found in coconut ketones.

Ketones are energy producing molecules made from fats. Our bodies can make them from stored fat or from special fats known as medium chain triglycerides (MCTs) found in coconut oil. Ketones are produced specifically by the body to feed the brain. Richard Veech, MD, a long time ketone researcher and senior scientist with the US National Institutes of Health describes ketones as “superfuel for the brain.” Ordinarily glucose powers our brain’s cells. However, when the brain is plagued with chronic inflammation, irritation, and immune over activation, as is seen in all autistic children, brain cells have difficulty processing glucose. The lack of sufficient fuel causes the brain to downshift into a lower rate of performance. Normal growth and development are stifled and learned skills may become lost as the brain’s cells are starved for energy and struggle for survival.

Ketones act as an alternative fuel to glucose—a much more potent and efficient fuel. When ketones are available, it is like putting high performance gasoline into the tank of your car. You get better gas mileage, higher performance, with less wear and tear on the engine and less pollution. Ketones bypass the defect in glucose metabolism and provide the brain with the energy it needs to function and develop properly.

Ketones not only supply a superior source of energy to the brain but trigger the activation of specialized proteins called brain derived neurotrophic factors that function in brain cell maintenance, repair, and protection.

They also stimulate the growth of new brain cells to take the place of dead or dying cells. This allows healing and repair to take place.

Ketones are ordinarily produced when blood glucose levels become low. Since glucose is the body’s primary source of energy, when glucose levels fall, the body starts mobilizing stored fat to produce ketones to maintain adequate energy levels.

Medical science has learned how to alter blood ketone levels by manipulating the diet. Ketogenic diets, which boost ketones to therapeutic levels, have been used successfully for decades for the treatment of other neurological disorders, most notably epilepsy. More recently they are being used to treat Alzheimer’s and Parkinson’s disease.

Another way to elevate blood ketone levels to therapeutic levels is to consume a source of MCTs. There are very few dietary sources of MCTs. The richest dietary source by far comes from coconut oil. Coconut oil is composed predominately of MCTs. Eating coconut oil can raise blood ketones to levels that can have a pronounce effect on brain growth and development.

Feeding your child coconut oil or MCTs is not as strange as it might seem. MCTs are a normal and natural source of nutrition for infants and small children. Another source of MCTs is found in human breast milk. This isn’t some accident of nature, they are there for an important reason. They are essential for proper brain development. In fact, MCT-derived ketones provide the basic building blocks for new brain tissue. They are required to build baby’s brains as well as provide needed energy. In fact, coconut oil or MCTs are added to all commercial and hospital infant formulas to assure proper brain growth and function.

Autism has long been considered an enigma to medical science. Most doctors have no clue what causes it or any idea how to prevent or treat it. The only medically recognized form of treatment is an attempt to teach affected children how to manage the disorder and live with it. Antidepressants, antipsychotics, and stimulants are often prescribed to help cope with symptoms. No possibility of a cure is offered, as the condition is considered permanent—in other words “hopeless.”

Autism, however, is not a hopeless condition. It can be prevented and successfully treated without the use of drugs. Low Cholesterol Linked To Elevated Cancer Risk

New data from the Framingham Heart Study finds that low LDL-cholesterol is related to the future development of cancer.

Scientists studied 201 participants with cancer who were matched with 201 controls who were cancer free. The researchers looked at the trend of LDL-cholesterol for an extended period of time prior to cancer diagnosis, using data taken at four points over an average of 18.7 years prior to diagnosis. They found that LDL-cholesterol levels were lower in the participants with cancer than their matched controls at each of the data points.

As compared to the cancer-free subjects, the trend of low LDL-cholesterol in those who developed cancer was consistent throughout the period of the study. (Medicalnewstoday.com 3.27.2012)

This is another, in an ever-growing number of studies showing an association between low cholesterol (including LDL-cholesterol) and cancer development. The AMA and most cardiologists have been beating the drum claiming that we need to lower cholesterol levels down to numbers only obtainable through the use of medications such as statin drugs.

  1. However, they don’t inform the public that there is a risk to lowering cholesterol levels. One risk is developing cancer.
  2. Another risk is poor immune system function since cholesterol helps the cells maintain their integrity.
  3. Also, lowering cholesterol to miniscule levels will worsen toxicity symptoms as cholesterol helps to buffer toxicities in the body.
One of the highest levels of cholesterol in the body is in the brain.

It doesn’t take a rocket scientist to predict that lowered cholesterol levels would be associated with brain disorders. In fact, lowered cholesterol levels (and LDL-cholesterol levels) have been associated with the development of neurological disorders such as Parkinson’s and Alzheimer’s disease.

Cholesterol-lowering medications are overused.

  • There is no known benefit of these medications in the elderly as lowered cholesterol levels predict a shorter lifespan in this population.
  • If you have not had a stroke or a heart attack, there is no known benefit of a statin drug.

Women have never been shown to benefit from taking a statin drug. The only benefit that statins have been shown to provide is for patients who have already suffered a cardiac event—patients who have previously had a heart attack or a stroke. In this case, the research shows a slight reduction in non-fatal heart attacks (approximately 1%) after three years of use.

More information about statins can be found in my book, Drugs That Don’t Work and Natural Therapies That Do. Educate yourself about how these drugs work. When you do, you will see that the use of statin drugs does not make biochemical sense. Furthermore, the research behind statin drugs does not make common sense. If you have high cholesterol levels, search for the underlying cause and treat it. That is a common sense approach to a medical problem.

Know Your Triglyceride Level

Doctors reveal a patient’s cholesterol levels along with another number: triglyceride level.
Unfortunately, when the two numbers are lumped together, patients often don’t pay attention
to triglycerides, as though that’s merely an afterthought. It’s not.

When you eat food that is too high in fat or sugar, the portion that is not metabolized as energy
goes into your blood as triglycerides. In addition, certain medications may raise triglyceride levels.
These include:
• Beta blockers
• Estrogens
• Retinoids (as in skin care creams)
• Psychotropic drugs (like antidepressants and
anti-anxiety medications)
• Birth control pills

However, the biggest culprits are the usual suspects —
  • obesity
  • inactivity
  • smoking
  • drinking too much alcohol.

You don’t need a separate test to find out what your triglyceride level is, as it is normally included in the blood lipid profile that measures LDL, HDL, and total cholesterol levels.

A healthy triglyceride level is 150 mg/dL or less (according to standard lab values, but I recommend levels well below 100 mg/dL - Erin)

Even if your cholesterol levels are low, high triglycerides can cause problems, so you have to pay attention to lowering your reading.

Erin recommends: A Carb-restricted, moderate protein, high natural fat diet is the way to get trigs under control. Coconut oil, grass-fed butter, olive oil, cod liver oil, macadamia nut oil, nuts, seeds, grass-fed animal foods. AVOID: industrially processed seed oils like corn//safflower/sunflower/soy/canola. Never eat margarine or spreads or blends - fake plastic butter doesn't lead to health! ONLY real food will get you to your health goal.

What is carb-restricted? Avoid any foods made with wheat, sugar (any of its various forms), refined grains, corn. Limit rice. Eat sweet potatoes instead of white. Bread is not your friend. Gluten is not your friend. Paleo. Primal.

CAFOs (Concentrated Animal Feeding Operations):
CAFOs are cauldrons of blood, antibiotics (70% of antibiotics produced in the US are used in the livestock industry) and grain (60% of US is fed to animals.
Feedlots produce 300 million tons of manure a year, and animal run off has caused a dead zone the size of New Jersey in the Gulf of Mexico.
A modest CAFO with 5,000 swine will deal with as much feces as a city of 20,000 people.
Except that it doesn’t have a sewage system.
The waste produced by CAFOs is solid, liquid and gas and it damages the land, water and perhaps most of all the atmosphere.
The livestock industry produces 18% of all CO2 equivalent emissions on the planet and contributes more to climate change than driving cars.

Maybe it is time to stop buying animal foods from CAFO and start buying organically raised, green-fed - like Beyond Organic or possibly your farmer's market.

Sprouting 101

Sprouting

Sprouting is the process of soaking, then germinating seeds and beans.

Eating the young seedling sprout provides an abundance of nutrients in the freshest form possible.

Soaking the seed or bean in water releases the natural enzymes and the dormant seed/bean comes to life. The sprout is a nutrient-dense food, containing vitamins, minerals, fiber, enzymes, easily digestible plant carbohydrates and proteins.

Sprouting can be lots of fun. All you need is a glass jar, some seeds or beans, filtered water and a cheesecloth. You can also buy a sprout jar or sprout kit from your health food store.

  1. For beginners, buy a bag of organic dried mung beans.
  2. Measure out about 1/3 - 1/2 cup and place in a large jar.
  3. Cover seeds with filtered water and soak over night.
  4. The next day drain the water out, rinse, and drain again.
  5. Cover the mouth of the jar with cheese cloth or a coffee filter and let sit on your counter 2+ days to sprout. Turn the jar on its side for more surface area to grow. Keep out of sun.
  6. Be sure to rinse and drain the jar a few times each day.
  7. If you let them grow too long on the counter, they will begin to sprout another set of leaves.

Your Statin is Causing Diabetes & Memory Loss

The FDA added two new warnings to statin drugs this week. These warnings include an increased risk of diabetes and mental confusion among statin users. The FDA report said that all statin labeling must carry warnings about increased risk of elevated blood sugar and transient memory loss and cognitive problems.

Since their inception, there have been reports of mental confusion and cognitive problems with statin drugs. This should be no surprise to anyone who studies how statins work in the body. In fact, I have written extensively about the side effects of statins in my book, Drugs That Don’t Work and Natural Therapies That Do. Statins are a class of medications that poison the enzyme HMG-CoA reductase. This enzyme is important for facilitating cholesterol as well as CoQ10 production.

The majority of the brain is made up of cholesterol. It does not take a rocket scientist or a doctor to predict that cholesterol-lowering medications will cause brain dysfunction. Due to their mechanism of action, statins are bound to cause a decline in brain function. I have seen many patients who take statin drugs and consequently suffer with memory loss, forgetfulness, anxiety, and other brain problems. I counsel these patients to stop taking statin drugs and begin natural therapies to help the brain recover.

Millions of Americans are suffering from diabetes. If statins increase the risk of diabetes, perhaps they should be not be given to overweight patients or any other patients at risk for diabetes.

Statins cause a myriad of side effects because they poison a crucial enzyme in the body. Remember, you can’t poison a crucial enzyme for the long-term and expect a good result.

The FDA warnings were long overdue. I suggest educating yourself about how statins operate in the body. If it makes sense to you to poison a crucial enzyme, then consider using it. A better course is to search for safe and effective natural therapies that help to support the body. More information about these therapies can be found in my books and newsletters.

Q) We love lightly toasting chia seeds in a pan, will this degrade the omega3?

Just like baking, there is no evidence that the omega3 content will be reduced in terms of quantity or quality. Temperature is the key aspect here. For example you could not fry the seeds as this could lead to degradation, however baking or lightly toasting should not cause a problem.

Q) How much chia should I eat each day?

There is no definitive answer to this question. As chia is a food, really there is no limit to how much you can eat. One of the main reasons a person eats chia is to obtain omega-3. The obvious question is how much gives sufficient omega-3. The 2010 Dietary Guidelines for Americans states that an adequate intake of ALA (the form of omega3 in chia) ranges between 1.1 and 1.6 grams/day for adults. Since12 to 18 grams (2 to 3 teaspoons) of chia contain between 2.5 and 3.6 grams of ALA, this is more than a sufficient amount to meet this recommendation.

Q) Which varieties of chia do you sell?

We only offer Salvia hispanica L. There are several chia species, but the only one that has high omega-3 levels is the Salvia hispanica L.

Chia gel: a food extender /calorie displacer:

The gel can be added to creamy/liquid food items such as jelly, jam, yogurt, mustard, ketchup, salad dressing, butter, barbecue sauce, puddings, etc. The gel doesn’t affect flavors, offers nutritional benefits, and cuts calories by decreasing the amount of the food item being extended or displaced.

Slowly pour chia seeds into water while briskly mixing with wire whisk.
Wait a few minutes then whisk again
Let mixture stand about 10 minutes
Whisk again before using
Store in refrigerator in a covered container (The chia gel will keep for up to 2 weeks)

You’ll need to experiment to find the ratio of chia gel: food item that you prefer.

Note: Soaking in water will soften the chia gel seeds, but they are still a little crunchy.

To extend nut butter or butter: Mix 2 tablespoons of almond butter or butter for every 1/2 Tbsp chia gel (recipe above).


Lemon - Chia Seed Dressing
Makes 3/4 cup

2 Tbsp chia seeds
1 Lemon
3 Tbsp Mayo
1 Tbsp Dijon Mustard
a little raw honey, if you prefer

Zest lemon into mixing bowl.
Obtain 4 Tbsp of lemon juice.
Add mayo and whisk.
Add honey, Dijon mustard, whisk again.
Add chia seed, whisk again.
Pour over salad.

Science Shows DHEA Works Best as Cream, Not Pill

Pregnancy Nutrition


Most of Sally Fallon's recommendations for nutrition during pregnancy and feeding babies have become the foundation of my core recommendations for friends and clients in this lifecycle. In her book Nourishing Traditions (2001) Fallon makes the following suggestions for couples six months prior to conception:
  • Eat foods rich in fat-soluble vitamins and minerals including organic liver and other organ meat (once a week), fish eggs* and seafood*, eggs, raw grass-fed dairy including milk, butter, cream and fermented dairy foods
  • Daily cod liver oil supplement, especially fermented cod liver oil taken with high vitamin butter oil
  • Organic meat
  • Bone broths
  • Vegetables, especially green leafy vegetables
  • Lacto-fermented grains, beverages, condiments
  • Legumes
  • Evening primrose oil, borage or black currant oil
  • Bee pollen
  • Mineral powder
  • Wheat germ oil
  • Acerola powder
  • B vitamin foods, beet kvass, Kombucha, appropriately prepared raw fish and raw meat (for liver support and morning sickness)
  • Eliminate sugar, white flour, hydrogenated vegetable oils, excess polyunsaturated oils, caffeine and alcohol

*I do not agree with consuming shellfish. The FDA says, "All shellfish (filter-feeding molluscs) are potentially toxic (2009)." When shellfish feed on certain algae, toxins can accumulate in the shellfish. Eating contaminated shellfish can result in a variety of symptoms including severe neurological and gastrointestinal effects.
Fish eggs would be another food of questionable value compared to potential toxins. A 2008 study looked at caviar (fish roe of sturgeon) and found that this food may contain high levels of contaminants. "Concentrations of organic contaminants, including DDT, hexachlorocyclohexanes (HCHs), polychlorinated biphenyls (PCBs), brominated flame retardants (polybrominated diphenyl ethers (PBDEs)), and 23 metals were measured in three species of caviar (Acipenser Huso huso, Acipenser gueldenstaedti, and Acipenser stellatus) imported from Azerbaijan, Bulgaria, Iran, and Russia just prior to the 2006 export ban (Wang, Batterman, Chernyak, and Nriagu, 2008)."
Many women are told to avoid fish during pregnancy to their detriment. While it is true that fish can contain mercury, they also often contain selenium which binds the mercury so it is not harmful to eat the fish. The only recommendation around fish is to eat ocean fish, wild caught, and avoid fish with a higher mercury content than selenium. These fish to avoid include: pilot whale, marlin, swordfish, tarpon and certain species of shark (Selenium in Ocean Fish, n.d.).

Easy Roasted Chicken and Vegetables

Found this delicious recipe in Margaret Floyd's book, Eat Naked.

1 whole chicken, 3-4 pounds
Sea salt
1 lemon, quartered
1 head garlic, separated into cloves and peeled
4 sprigs fresh rosemary (I used dried)
2 small onions, coarsely chopped
2 medium carrots, sliced thick
1 cup dry white wine
1 cup filtered water
1 tbs butter
pepper

Preheat oven to 350
Wash the chicken and pat with a paper towel to dry.Sprinkle the inside with salt, then stuff the chicken with half the lemon wedges, half of the garlic cloves, and the rosemary.

Place the chicken in a roasting pan. Arrange the onions and carrots around the chicken, along with the remaining lemon wedges and garlic cloves.
Add the wine and water.

Smear butter over chicken, then sprinkle liberally with salt and pepper.
Cover the pan with a lid or with foil (I added a layer of parchment paper between the chicken and the foil).
Bake 1 1/2 hours.
Remove cover and bake another 20 - 30 minutes, until brown.

(after making the stock, I store in quart mason jars and add 1 tsp Real Salt)

Chicken Stock

Science validates what our grandmothers knew. Rich homemade chicken broths help cure colds. Stock contains minerals in a form the body can absorb easily—not just calcium but also magnesium, phosphorus, silicon, sulphur and trace minerals. It contains the broken down material from cartilage and tendons--stuff like chondroitin sulphates and glucosamine, now sold as expensive supplements for arthritis and joint pain.
1 whole free-range chicken or 2 to 3 pounds of bony chicken parts, such as necks, backs, breastbones and wings*
gizzards from one chicken (optional)
2-4 chicken feet (optional)
4 quarts cold filtered water
2 tablespoons vinegar
1 large onion, coarsely chopped
2 carrots, peeled and coarsely chopped
3 celery stalks, coarsely chopped
1 bunch parsley

*Note: Farm-raised, free-range chickens give the best results. Many battery-raised chickens will not produce stock that gels.
(Erin: I roast the chicken for dinner, then save the bones for bone broth)

If you are using a whole chicken, cut off the wings and remove the neck, fat glands and the gizzards from the cavity. Cut chicken parts into several pieces. (If you are using a whole chicken, remove the neck and wings and cut them into several pieces.) Place chicken or chicken pieces in a large stainless steel pot with water, vinegar and all vegetables except parsley. Let stand 30 minutes to 1 hour. Bring to a boil, and remove scum that rises to the top. Reduce heat, cover and simmer for 6 to 8 hours. The longer you cook the stock, the richer and more flavorful it will be. About 10 minutes before finishing the stock, add parsley. This will impart additional mineral ions to the broth.
Remove whole chicken or pieces with a slotted spoon. If you are using a whole chicken, let cool and remove chicken meat from the carcass. Reserve for other uses, such as chicken salads, enchiladas, sandwiches or curries. Strain the stock into a large bowl and reserve in your refrigerator until the fat rises to the top and congeals. Skim off this fat and reserve the stock in covered containers in your refrigerator or freezer. (I add 1 tsp Real Salt per quart of broth)

Frankenbug is loose on the farm, and no one knows what will happen next.

A brand-new microscopic bug that never existed before in nature is now in animal feed that comes from genetically engineered crops. And this Frankenbug has been clearly linked to infertility and miscarriage in cattle, horses, pigs, sheep, and poultry.1

A letter by a respected professor at Purdue University, written to agriculture secretary Tom Vilsack, warned of a “microscopic pathogen that appears to significantly impact the health of plants, animals, and probably human beings.”

MicroscopeA dangerous new microscopic organism has been created by GMO farming practices. This Frankenbug hurts plants and the animals that eat them.

Prof. Don M. Huber, a member of the government’s own USDA National Plant Disease Recovery System said the pathogen has evolved because of GMO crops.

Fortunately, some courageous members of Congress introduced a proposed law that would make Big-Agra companies – that are forcing their genetically modified food on you – label their products as “GMO” (genetically modified organism) or “GE” (genetically engineered).

I’m glad we have a few elected officials who will stand up to the giant Agribusiness companies that control our food supply. And I hope more will join them.

The House bill, called “The GE Food Right to Know Act,” is a good first step.

In the meantime there are plenty of states that are looking to pass their own laws to force manufacturers to tell you when GMOs are in your food. Vermont, Connecticut, and California all have bills or ballot initiatives going.

There’s even a coalition of about 450 groups, including health, agriculture, faith, parenting, and environmental organizations, that have a campaign and website called “Just Label It.”

Because, as it stands right now, the crops and animals that are genetically tampered with are not regulated.

That’s bad enough, but what troubles me even more is that if the food you’re eating has been tampered with genetically, no one has to tell you.

Not only that, they don’t have to release the studies on the effects of these foods, because the companies are private. Private companies don’t have to release any information to you or anyone.

Let me give you an example.

Monsanto, one of the worst GMO offenders in the world, genetically engineered a growth hormone to give to milking cows.

The FDA was shown Monsanto’s own study on the hormone’s safety. In other words, they saw exactly one study, and it was done by Monsanto itself. Monsanto tested this stuff, called rBGH, for only 90 days on only 30 rats.

The study was never published anywhere, nor was it peer-reviewed like most scientific studies. Yet the FDA stated the results showed no significant problems and gave its okay for the hormone to be used on commercial milking cows.

But wait, it gets worse. In Canada, where Monsanto originally tried to strong arm the Canadian government into approving rBGH, scientists did their own rBGH study. They found some of the male rats developed cysts on their thyroids and abnormalities in their prostates.2

And rBGH can also cause mastitis in the cows. This is an infection brought on by inflammation that can cause pus and blood to be secreted into the milk.

Canadian government scientists testified that they were being pressured by higher-ups to approve rBGH against their better scientific judgment. And after eight years of study, Canada rejected Monsanto’s application for approval of rBGH, joining the European Union, Japan, Australia, and New Zealand, which have all banned rBGH because of health concerns.

The U.S. government, on the other hand, continues to approve genetically modified milk. And crops, too. The government considers these crops safe and doesn’t even regulate them.

Nutrion FactsMonsanto and other companies that make genetically modified crops want your food labels to have information about everything else, but not about GMOs (genetically modified organisms).

What makes this an even bigger problem is that glyphosate, the weed-killer Monsanto markets as Roundup and has modified the crops to resist, actually promotes these kinds of pathogens, or Frankenbugs.

Frankenbugs Transmitted to People

These new microscopic bugs that didn’t exist until GMO crops were created can hurt plants, remove the plants’ nutrients, and hurt the animals that eat the crops, too.3

Professor Huber says the new pathogen increases in soil treated with glyphosate, is then taken up by plants, transmitted to animals via their feed, and onward to people by the plants and meat we consume.

Monsanto has tried hard to discredit Prof. Huber.4 But researchers have already proven that you can’t trust what they say about what their weed-killer does. Glyphosate has been found to kill human placental cells at concentrations below what’s been approved by regulators. Roundup is lethal at even lower concentrations.5

And their GMO crops? Evidence of the dangers is leaking out from Europe, Russia, and many other countries around the world.

Here are just some of their findings:6,7,8,9,10,11

  • Allergies increased. When GMO soy was introduced, allergies jumped by 50%. Allergen proteins were 7 times higher. Some were unique only to GMO soy.
  • It wreaked havoc on digestion and the absorption of nutrients. Digestive enzymes plummeted, and GMOs caused lesions in the digestive tract.
  • Proteins that control stress response and energy creation in cells changed. This resulted in faster aging of cells.
  • It caused reproductive problems. Sperm cells had trouble developing, and embryos showed altered genes. Offspring were smaller, and many more died.

So why do we need a Congressional act to force manufacturers to label their food as GMO when it should be the law that they do it?

The FDA ruled that GMO foods were not “materially” different from other foods, so they didn’t need labels. You see, the Federal Food, Drug, and Cosmetic Act requires the FDA to stop misleading food labels that leave out “material” information.

But, the FDA has limited that to what you or I can taste, smell, or otherwise sense.

Genetically Engineered Foods

And, because GMOs can’t be detected by your senses, the food with GMOs is “substantially equivalent” to regular food according to the FDA. Companies, therefore, don’t have to label foods as containing GMOs.

But until the “Right to Know” act is passed, I want to help you avoid foods with genetically modified organisms. Here’s what I recommend:

For starters, beware of any food that has canola oil or corn in it.

75 percent of canola and 73 percent of corn crops grown in the U.S. are GMO, according to the USDA. It’s gotten so bad that even bees can’t find nectar to make honey without getting it from GMO canola.

Even if the label says organic, most foods you buy with these in it will have been genetically changed. The good news is canola oil is not a healthy oil anyway, so you’re not missing anything. Stick with healthier oils like olive, sunflower, or safflower.

Next, eliminate as much commercial beef and poultry from your food as you can. They are raised on GMO corn, soy, and grains. Instead, choose meat from another farm with pasture-raised animals.

As far as soy goes, most people would tell you to stay away from all soy because so much of it has been genetically modified. But I don’t want you to deprive yourself. And the Japanese have enjoyed soy for hundreds of years. They simply use non-GMO soy, and instead of processing it, they ferment it naturally so you can eat it.

Natto, tempeh, and tofu are made from soy, but in Japan they use non-GMO organic soy. In fact, the soy that’s gown here and sold to Japan by companies like Sow True Seed has to be GMO-free or the Japanese won’t allow it into their country. The Non-GMO Sourcebook at nongmosourcebook.com tells you how and where to get non-GMO seeds and who sells non-GMO soy products.
